Ingredients:
  • 6 ea. Cedar sheets, soaked in water
  • 34 5oz Salmon steaks
  • 1/8 tsp. Salt
  • 1/4 tsp. Pepper
  • 1 tsp. White sesames
  • Miso Mix -
  • 3 tbsp. Miso
  • 1/2 tsp. Rayu
  • 3 tbsp. Mirin
  • 1 tbsp. Sugar
  • Spinach -
  • 3 cup Boiling water
  • 8 oz. Spinach
  • 1/2 tsp. Grated garlic
  • 1/2 tsp. Sesame oil
  • 1/4 tsp. Salt
  • Mushrooms -
  • 2 ea. Maitake mushrooms, quartered
  • 2 tbsp. Olive oil
  • 1 tsp. Salt
  • 1/8 tsp. Pepper
  • 2 oz. Yakitori sauce

In a small bowl, whisk together the miso, sugar, and Mirin until well blended. Lightly season each salmon with salt. Heavily brush each salmon filet with the miso mix. Garnish with white sesame. Reserve remaining miso until salmon is cooked.

Place salmon in a dish inside a larger dish. Burn two sheets of cedar and place them in the larger dish and cover allowing them to smoke for 5 minutes.

Blanch spinach in salted water briefly and take out and press firmly after 10-15 seconds of cooking.

In a bowl, mix the spinach with the garlic, sesame oil, and ½ tsp of salt.

Heat a large iron grill pan, grill the mushrooms, season with salt and pepper, and drizzle Yakitori sauce.

Unwrap salmon and place each filet on a cedar sheet and bake in a 400-degree oven until salmon is medium-rare or desired doneness.

Lightly season each salmon with salt. Enjoy!
