This Pineapple Shrimp Stir Fry is a skillet full of sautéed shrimp tossed in a light sauce with sweet chunks of pineapple. Plus, the pineapple boat makes it look amazingly impressive.

  • 8 count Prawns, peeled
  • 1 whole Pineapple
  • Marinade
  • 0.25 tsp. Salt
  • 0.5 tsp. Cornstarch
  • 1 pinch White Pepper
  • 0.25 tsp. Salt
  • 1.5 tsp. Sugar
  • 1 tbsp. Vinegar
  • 0.5 tsp. Sesame Oil
  • Cornstarch Slurry
  • 2 tbsp. Water
  • 0.5 tbsp. Cornstarch
  • 1.5 tbsp. Oil
  • 1.5 tbsp. Ginger Slices
  • 2 tbsp. Scallion
  • 1.25 tbsp. Garlic Slices
  • 1 tbsp. Thai Chili

Peel and devein the prawns, and rinse them well. Pat them dry to remove extra moisture. Add salt, corn starch, and pepper, and marinate for 10 minutes. Set aside for later.

Cut the pineapple lengthwise about 1 inch (2.5 cm) deep from the top, right through the crown, keeping it attached. Leave cut-side up in front of you.

Use a spoon to scoop the pieces out, leaving the pineapple empty. Submerge the pieces in lightly salted water for about 10 minutes. This step makes the pineapple tastes even sweeter.

Mix the cornstarch and water and make sure to thicken its consistency. Set aside for later.

Heat the wok and add some cooking oil. First, stir fry ginger, green onion, garlic until fragrant. Add the prawns, and stir fry until fragrant. Remove the prawns from the wok. Now, add pineapple and stir fry briefly.

Next, add the prawns back into the wok and stir fry. Add the red chili peppers, and pour in the mixed cornstarch slurry. Stir fry until all ingredients are mixed well. Serve them in the empty pineapple shell.
