This is a healthy version of a Cauliflower Gratin with vegetables only and with no potatoes or cream. Light cauliflower with a nice vegetable saute on the top and just a little bit of Mozzarella on top. Keep up with your diet with this low-fat, low-carb recipe.

Ingredients:
  • 1 Large Cauliflower cut into florets
  • 1 Large Red or yellow onion cut small diced
  • 1 Large Vine ripe or Roma tomatoes cut in halves
  • 1 Small Green bell pepper cut small diced
  • 1 Small Red bell pepper small diced
  • 1 Small Yellow bell pepper small diced
  • 1/4 cup Chopped cilantro
  • Extra virgin olive oil
  • 1/4 tsp. Ground black pepper
  • 1 tsp. Cumin (separated in half)
  • 1 tsp. Paprika
  • 1 tsp. Garlic powder
  • 2 cup Mozzarella shredded
Directions:

Preheat the oven to 375 °F/190 °C. In a saucepot place the cauliflower florets and fill with water enough to almost cover the cauliflower (stop 1 inch before the top of the cauliflower). Now add salt (1 tsp. approx.), half the cumin, and boil until knife tender but still firm, 7 minutes approximately. Once cooked, set aside in a bowl.

Heat up a sauté pan on a medium flame for a couple of minutes and add a couple of drops of extra virgin olive oil and add the onion diced right away. Keep cooking on low to medium heat until translucent (3 minutes approx.)

Now add all the bell peppers diced and cover with the lid and keep cooking while you execute the next step.

Using a cheese box grinder, grind the tomato halves through the largest holes of the grinder.

Add the ground tomato to the pan with the peppers and onions, and add the black pepper, the other half of the cumin, paprika, and garlic powder, and cook on low heat for 15 to 20 minutes, depending on how watery your tomatoes are.

Mash the cauliflower with a fork and add 2 tbsp of olive oil and chopped cilantro (leave a little bit out for the garnish) in the bowl with the mashed cauliflowers.

Place the cauliflower mixture into an oven dish and flatten with your hands or a spoon to create a compact layer of cauliflower at the bottom of the dish.

Pour the sauce you made in the sauté pan onto the layer of cauliflower and spread evenly.

Add the mozzarella cheese on top and bake in the oven at 375 °F/190 °C for approximately 18 minutes or until the mozzarella has slightly browned but not too much.

Garnish with chopped cilantro and cut into square portions.
