For any occasion or unexpected visit, these stuffed chicken breasts are the best choice to come up with as a tasty and easy-to-prepare meal. The potatoes, peppers, and carrots make up the filling. Chicken breasts are just filled with this stuffing and pan-fried, the melting cheese on the top will make them even tastier. They could be served with any side dish as per your wish – fresh salad, rice, or flatbread. Enjoy this easy and quick dish!

Ingredients:
  • 9 Large Potatoes, diced
  • 3 Large Bulgarian red pepper, diced
  • 0.4 cup Sunflower oil
  • 5 Large Carrots, shredded
  • Salt
  • Black pepper powder
  • Bunch of Parsley, chopped
  • 7 oz. Cheese, shredded
  • 6 Large Chicken breasts
  • Paprika to taste
Directions:

Clean the potatoes and the peppers and dice them.

Put sunflower oil into a frying pan and add the diced potatoes and peppers.

Clean the carrots and shred them. Add them to the potatoes and peppers. Season with salt and black pepper. Fry them together until soft, add with fresh chopped parsley and mix them together properly. This mix will be used as the filling.

Butterfly the chicken breasts. Season with salt and black pepper. Add the filling into the chicken breasts, put the filling on one half and cover with the second half.

Pour oil into the frying pan and add the stuffed chicken breasts, pan-fry until the chicken is soft. Then add shredded cheese and a pinch of paprika to each chicken breast. Let the cheese melt.

Serve with fresh vegetables. Enjoy!
