  • 2 tbsp. Sugar
  • 1 Large Egg
  • 5.5 tbsp. Milk
  • 1.5 tbsp. Melted unsalted butter
  • Filling
  • 4 tsp. Parmesan cheese powder
  • 5.2 oz. Mozzarella cheese
  • 2 tbsp. Sugar
  • Top

First, let's make the dough. Prepare 1.27 cups of bread flour. Add 1tsp of yeast and 2g of salt. Then add 2tbsp sugar and mix well with a spatula.

Then beat in a large egg, about 55g of it. Then add 80ml of milk, here it is best to use room temperature or lukewarm milk. Form it into a dough, no need to knead the dough. Cover the dough and let it rest for 20 minutes.

After 20 minutes, add 20g of melted butter. Fold the dough in by pulling it with your hands, about a dozen times, the butter is absorbed by the dough and it's ready. At this point, the dough is very sticky, cover and continue to let it rest for 20 minutes.

After 20 minutes, continue to pull and fold the dough, about 10 times. Check the state of the dough, you can see a film. Roll out the dough, put it in a bowl, and cover it with a lid for the first fermentation.

While the dough is rising, prepare the filling with 150g of mozzarella cheese, if you like cheese, you can add more. Add 10g of cheese powder, skip it if you don't have it. Add 25g of sugar and mix well.

After 1 hour, the dough is almost 2 times bigger. Pour the dough onto a mat, press it with your hands to exhaust it, and press the dough into a large round shape, thick in the middle and thin on the sides.

Add the cheese prepared before like a bun to wrap it up, close the mouth pinch tight, must pinch tight, otherwise, the cheese will run out. After wrapping, flip it over and put it on top of the baking paper. Press slightly with your hands, cover with plastic wrap and let it rest for 15 minutes.

After 15 minutes, use a rolling pin to roll out the dough a little thinner. There is a lot of air inside, use a stick to make some holes to get rid of the air After rolling it out, transfer it to the top of the baking tray Cover with plastic wrap and let it rise for a second time, about 40 minutes.

Brush the top with some softened butter at room temperature and sprinkle with cheese powder. Bake in the middle of a preheated oven at 360°F/180°C for 18 minutes. The bread comes out of the oven, it smells so good!
