Yuxian eggplant is often called a Chinese eggplant in hot garlic sauce. Yuxiang is an incredibly celebrated flavor profile from the Sichuan province of China. This is a simple yet powerful dish especially if you are into eating vegetables.

Ingredients:
  • 7 oz. Eggplant
  • Sauce
  • 1 tbsp. Sugar
  • 1 tbsp. Sweet black rice vinegar
  • 1 1/2 tbsp. Light soy sauce
  • 1 tbsp. Sesame oil
  • 1 tbsp. Ginger, minced
  • 1 tbsp. Garlic, minced
  • 1 tsp. Facing heaven pepper
  • 1/2 tbsp. Pickled red chili
  • 1/2 tbsp. Green onion, chopped
Directions:

Cut the ends of the eggplants and sliced them in half horizontally. Make a diagonal slit in each half skin side up to a diamond effect.

In a bowl, combine well sugar, black rice vinegar, soy sauce, sesame oil, minced ginger, minced garlic, chopped facing heaven pepper, pickled red chili, and chopped green onions; set aside.

Place the eggplant into a steamer and steam for 10 minutes on low heat.

Transfer the cooked eggplant to a serving plate and top with the sauce mixture.

Serve immediately.
