Braised Prawns is a famous dish in Shandong province. This method of braising in soy sauce and sugar produces deeply savory dishes with a rich mahogany hue – a feast for the eyes as well as the mouth.

Ingredients:
  • 1.5 lb. Prawns
  • 0.33 cup Ginger
  • 0.33 cup Scallion
  • 0.25 tsp. White Pepper
  • 1 tbsp. Sugar
  • 1.5 tbsp. Soy sauce
  • 2 tbsp. Cooking wine
  • 5 tbsp. Cooking oil

Clean and cut off the whiskers, claws, mouth, to be neat. Devein the prawns.

Make a shallow cut in the back of the shrimp.

Warm up a large skillet to medium-high heat, add cooking oil. Put in the prawns and stir-fry until the prawns turn red. Add sliced ginger and sliced scallion. Stir fry until fragrant.

In a small bowl, add white pepper, sugar, soy sauce and cooking wine. Mix well.

Pour in the sauce then stir-fry. Meanwhile, whisk in cooking wine. Cover with the lid and turn down to low heat, simmer for 5 minutes.

Transfer to the serving plate and garnish with scallion. Enjoy!
