Cut asparagus into 3-inch segments. Remove the shells from the shrimp. Devein the shrimp and rinse them thoroughly.
Add salt, sesame oil, and pepper to the shrimp. Marinate for 15 minutes.
In a bowl, mix sauce ingredients.
Heat the 12-inch pan. When the pan is hot, add cooking oil and pan-fry the shrimp until 60% cooked. Take them out and set aside for later.
In the pan, add a little more oil. Then add diced ginger, garlic, dried chili pepper, and asparagus. Stir-fry the ingredients until they are about 60% cooked. Add the pan-fried shrimp, and stir-fry until all ingredients are mixed well.
Finally, pour the sauce mixture over the ingredients. Stir-fry until fragrant.
