Home-made rustic chicken Cacciatora is a hearty dish with simple ingredients. A well-known Italian dish and this one is packed with flavors. The chicken drummers are browned off then slowly cooked in a tomato-rich sauce with fresh herbs and capers bubbling away in the one pot. take your dish to the next level of taste and color with a beautiful serving of smooth and creamy purple sweet potatoes.

Ingredients:
  • Purple potato
  • 2 qt. Cold water
  • 2 large Purple potato peeled and diced
  • 1/4 tsp. Pepper
  • 1/8 tsp. Salt
  • 3 tbsp. Oil
  • 4 tbsp. Butter
  • 1/2 cup Milk
  • Chicken
  • 2 tbsp. Extra virgin olive oil
  • 2 ~ 3 lb. Chicken drumsticks
  • 1 tsp. Pepper
  • 1 tsp. Salt
  • 4 spring Thyme
  • 1 sprigs Rosemary
  • Cacciatora
  • 4 cloves Garlic sliced
  • 1 ea. Celery stalks, small diced
  • 1/2 small Shallots
  • 1/4 small Red onion
  • 1/4 tsp. Pepper
  • 1/4 tsp. Salt
  • 8 ea. Juniper berries
  • 1 tbsp. Capers
  • 2 tbsp. Tomato paste
  • cup Red wine
  • 1/2 ea. Orange juice
  • 2 cup Tomato puree
  • 3 ea. Tomatoes
  • 1/2 cup Olives
  • Garnish
  • Thyme
  • Cherry tomatoes
  • Parsley

Boil until fork tender drain and add salt pepper butter and milk smash the potatoes until you reach your preferred smoothness.

In a medium-hot skillet add some oil and brown off the chicken. Season with salt and pepper to taste. Add thyme and rosemary. Remove from the pan set aside.

Cacciatora: pour a little more oil into the same pan and add the garlic, red onion, celery, shallots, salt, pepper, juniper berries, capers and cook until the brine is evaporated then make a center in the pan and fry the tomato paste for 1-2 minutes. Add the red wine and orange juice to the pan to deglaze cook for a further 5 minutes until the sauce becomes rich and glossy.

Add the fresh tomatoes to the sauce with the chicken and mixed olives cover with a lid and allow to simmer on low heat for approx 1 hour.

Garnish with thyme, cherry tomatoes, and parsley. Enjoy!
