1tbspScallions, sliced and greens/whites separated
In a large saute pan, heat olive oil over medium-high. Add chicken mince and sear until golden brown on one side thoroughly then turn over and then start breaking up the mince in the pan. cook throughout. Remove and reserve in a medium bowl.
Lightly salt the diced zucchini and set aside for two minutes to allow water to distract. Saute the zucchini in the pan with a little oil for approximately 3 minutes add pepper then place in the bowl with the chicken.
In a medium heat pan add oil, shallots, garlic and ginger cook until fragrant. Add the scallions, deglaze with the rice wine vinegar and add the coconut amino (or soy sauce) then ketchup and sriracha. Add the chicken zucchini mix and water chestnuts cook gently to allow all the flavors to come together. Check for seasoning.
Assemble the lettuce cup: add some dark scallions to the mix then scoop a generous amount of mix into the middle of the whole lettuce leaves garnish with more dark scallions and enjoy.
