Whether it’s for breakfast or for dessert, you can’t go wrong with a banana bread recipe. Complete with walnuts and a caramel bourbon sauce, this bread is moist and absolutely delicious.

  • 1/2 cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 2 Large Egg
  • For The Bananaㅤ
  • 3 Banana Very Ripe
  • 1/2 cup Plain Yogurt
  • 1/2 cup Sour Cream
  • 1 tsp. Vanilla Extract
  • ㅤDry Ingredients
  • 1 cup Flour
  • 1 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 2/3 cup Ground Flax Seed
  • ㅤFor The Nuts
  • 1/2 cup Walnuts
  • ㅤBourbon Caramel Sauce
  • 1 cup Granulated Sugar Sauce
  • 1/4 cup Bourbon
  • 2 sprigs Vanilla Beans
  • 1/2 cup Unsalted Butter
  • 1/2 cup Crème Fraîche
  • 1 tsp. Sea Salt

Preheat the oven to 180°C / 350°F.

In a large bowl, cream butter and sugar with a hand mixer.

In another large bowl, smoosh bananas and mix with vanilla, yogurt, and sour cream.

In a third bowl, sift flour with the rest of [Dry Ingredients].

In the creamed butter/sugar bowl, add the two eggs, one at a time using the hand-mixer until fully combined.

Add the banana mixture and mix well. Then slowly add the dry mixture in three batches and mix until just combined. Fold in walnuts with a spatula.

Spray a loaf pan with non-stick and fill with the batter. Bake 20-25 minutes until a toothpick enters and exits cleanly.

Combine granulated sugar and bourbon in a medium saucepan. Cook the mixture over medium-high heat, swirling the pan occasionally until the sugar dissolves, but do not stir at any point.

Add butter and vanilla seeds as well as the pod. Cook, swirling the pan occasionally so that the mixture browns to amber color. Be careful, it can burn quickly at this point.

As soon the caramel reaches an amber color, remove from heat and carefully whisk in the crème fraîche until the sauce is smooth. The caramel will bubble and splatter so use caution.

Carefully remove the vanilla pod and allow the sauce to cool.

Once cool, stir in the coarse sea salt to keep the texture and not dissolve. Drizzle syrup to the banana bread.
