Recipe

COOKING TIME: 15 min
TOTAL TIME: 3 hr 40 min
4 SERVING
Ingredients:
  • Dough:
  • 1.5 cup Bread Flour
  • 1 medium Egg, 30 gram
  • 1 tsp. Instant Yeast
  • 0.25 tsp. Salt
  • 1.5 tbsp. Sugar
  • 0.5 cup Cold Milk
  • 1.76 tbsp. Softened Unsalted Butter
  • Coconut Fillings:
  • 1 medium Egg, beaten
  • 2.4 tbsp. Caster sugar
  • 2.11 tbsp. Softened Unsalted Butter
  • 10 tbsp. Shredded Coconut
Directions:
1
Prepare the Dough: In a mixing bowl, combine bread flour, egg, instant yeast, salt, and sugar. Gradually add most of the ice milk, reserving a small amount, about 1 tbsp, for later.
2
Place the mixing bowl firmly on the stand mixer’s base. Insert the Dough Hook and start it on the lowest speed setting. While kneading, gradually add the remaining milk until the dough becomes homogeneous.
3
Incorporate the softened butter into the dough. Continue kneading until the butter is well incorporated, stopping to check the elasticity of your dough every couple of minutes.
4
After mixing, check the consistency of the dough with the windowpane test. Keep on stretching until it becomes a thin film in the middle without breaking. The dough must be thin enough to pass light through it. If it is obtained without any tear, then your dough is properly kneaded. Cover the dough and let it rise in a warm place for 2 hours.
5
Prepare the coconut filling: In a separate bowl, mix together the beaten egg, caster sugar, softened butter, and shredded coconut. Divide this mixture into 6 equal parts.
6
Shape each part into a ball and refrigerate them until needed.
7
Shape the Bread: After the dough has risen, divide it into six equal parts. Roll each part into a ball and let them rest for 20 minutes.
8
Flatten each dough ball and place a ball of coconut filling in the center. Enclose the filling by wrapping the dough around it, forming a filled ball.
9
Roll out each filled ball gently, then make some cuts in the dough without cutting through the filling. Shape it into a flower as shown in the video.
10
Let these shaped breads rise again for 50-60 minutes. Before baking, brush them with egg wash.
11
Baking: Preheat the oven to 170°C (340°F). Bake the bread flowers for 15 minutes or until they are golden brown. Enjoy!

The use of cold milk helps in achieving a soft, tender texture in the bread.
