Ingredients:
  • 2.1 oz. Unsalted butter
  • 1.7 oz. Cane sugar
  • 1.9 oz. Eggs
  • 1 oz. Milk
  • 0.5 oz. Chocolate
  • 2.8 oz. Cake flour
  • 0.6 tsp. baking powder
  • 0.7 oz. Cocoa powder
  • 1.7 oz. Chocolate chips
  • 24 Pieces Almond slices
  • 24 Pieces Chocolate chips
Directions:

Bring the butter to room temperature.

Add a small amount of milk to the chocolate and heat in the microwave for 10 seconds. Once the chocolate is melted, add the rest of the milk and stir. Allow cooling to 68-77 °F/20-25 °C.

Bring the eggs to room temperature.

Sift together the flours.

Make the muffin batter. Mix butter and cane sugar at room temperature.

Switch to a hand mixer and whisk for three minutes. Add the eggs in three or four additions, mixing well each time.

Add one-third of the flour mixture. Mix until there is a slight powdery consistency.

Add 1/2 of the chocolate milk. Stop mixing just before it is completely mixed.

Add 1/2 of the remaining flour and mix in the same way as before. Add all the chocolate milk.

Add all the rest of the flour and mix. Mix a few times and your dough is ready!

Put the batter into muffin tins. (Less than 60 g per muffin) Put the almond slices on top. And a few chocolate chips. Bake in the oven at 356 °F/180 °C for 25 minutes.
