This braised short rib dish is so easy to make, but taste amazing. The ribs go really well with vegetables such as carrots and potatoes.

Ingredients:
  • For the Short Ribs
  • 2 tsp. Neutral oil
  • 45 lb. English cut bone-in short ribs
  • 1/2 tsp. Pepper
  • 1 tsp. Salt
  • 1 cup Beef broth
  • 2 tbsp. Balsamic vinegar
  • 1 tbsp. Soy sauce
  • For the vegetables
  • 1 tbsp. Olive oil
  • 1 cup Onion, medium dice
  • 1/2 cup Mushroom stand
  • 1/2 cup Carrots, medium dice
  • 1/3 cup Celery root, or sub celery stalk
  • 1/4 tsp. Pepper
  • 1/2 tsp. Salt
  • 1 tbsp. Garlic, minced
  • 2 tbsp. Tomato paste
  • 2 ea. Bay leaves
  • 2 sprigs Fresh thyme
  • 1 cup Red wine, full-bodied

Season short ribs with salt and pepper. In a large skillet over medium-high heat, saute each side of the short rib until golden brown, add to the bottom of the Instant Cooker. Then add beef broth, balsamic vinegar and soy sauce to the pot.

Add vegetables to the saute pan and lightly saute and season with salt and pepper, add garlic cook until golden brown, for 1 minute. Add tomato paste and herbs. Then pour in red wine and cook until it is reduced by half.

Pour the sautéed vegetables into the instant pot over the short ribs. Add remaining ingredients to instant pot with salt and pepper. Cook the meat on High Pressure for 45 minutes + Natural Release for 15 minutes.

Remove meat carefully and check sauce consistency. If too loose, add a slurry of 2 Tbsp cornstarch and 3 Tbsp cold water (mixed together) and bring to a boil. Serve warm.

Some instant cookers let you saute in the cooker themselves instead of another saute pan, so check your cooker's instructions.
