A ratatouille of pretty vegetables like flowers in a pan. Many of you might remember the dish as a title of an animation movie about a chef. Ratatouille is a classic French dish. Not only it is a healthy dish made with vegetables, but the color combination of tomatoes, zucchini, and eggplants also makes it visually appealing. Ingredients:
  • 2 Large Eggplants
  • 1.5 Large Green zucchinis
  • 1.5 Large Yellow zucchinis
  • 8 Smaller Tomatoes
  • A little bit of Olive oil
  • Salt to taste
  • Pepper to taste
  • A little bit of Parsley
  • Ingredients for the sauce:
  • 2 Large Tomatoes (smaller size)
  • 3 Cloves Garlic
  • A half of an Onion
  • 1.5 Cups Tomato sauce
  • 1 Cup Water
  • 1 Tbsp Butter
Directions:

Cut the tomatoes, eggplants, and zucchinis with a mandoline slicer into 2mm slices. (tip. Put aside the leftover veggie pieces, whose cross-sections are too small.)

Slice the garlic and julienne the onions.

Cut the leftover veggie pieces and 2 tomatoes, which are for the sauce, into dice.

After melting some butter in a heated pan, add the veggie dice and stir-fry them with pepper. Once the veggie pieces are half-softened, add the tomato dice, tomato sauce, and water to it, and turn to a low simmer for 10 minutes, with the lid on, to make the sauce.

Arrange alternating slices of eggplant, zucchini, and tomato so that they are a spiraling array of overlapping vegetables, covering the sauce.

Sprinkle salt and pepper over the veggies and drizzle the mixture of chopped parsley and olive oil on top.

Bake it in the preheated oven at 356 °F/180 °C for 30~35 minutes. Enjoy!
