Ingredients:
  • 3 lb. Pork Rib
  • 2 tbsp. Brown Sugar
  • 1 tbsp. Granulated Garlic
  • 1 tbsp. Onion Powder
  • 1 tsp. Salt
  • 1 tsp. Ground Black Pepper
  • 1 tsp. Cumin Powder
  • 1 tsp. Five Spice Powder
  • 1 tbsp. Cayenne Pepper Powder
  • 1 tbsp. Red Yeast Rice Powder
  • 1 tbsp. Maggi Seasoning
  • 1 1/2 tbsp. Chu Hou Paste
  • 1 1/2 tbsp. Hoisin Sauce
  • 1/3 cup Rose Wine
  • Glazing liquid:
  • 1/4 cup Maltose
  • 2 tbsp. Honey
  • 3/4 cup Hot Water

Cut the pork ribs. Start from one corner at 45 degrees, cut it to 1/3 depth, cut it all the way to the end, and then switch to another 45-degree oblique knife from the other corner. Crosscut.

Sauce: In a medium bowl, add brown sugar, garlic powder, onion powder, salt, black pepper, cumin powder, five-spice powder, cayenne pepper powder, red yeast rice powder, Maggi seasoning, Chu Hou paste, and Hoisin sauce. Stir to mix well, then add rose wine.

On a large roasting pan, lay the pork ribs flat on the roasting pan, spread the sauce evenly, and put it in the refrigerator to marinate overnight.

To make the glazing liquid: In a medium bowl, add the maltose, honey, and hot water and mix well. Note: The hot water temperature is about 170°F/80°C.

Before putting it in the oven, use a barbecue brush to dip a little water and brush off the excess sauce on the surface of the ribs, so that the surface is not easy to burn when grilling. Wrap the topmost part with foil to prevent scorching. Then, hang the ribs with the special hook for the hanging oven.

Preheat the hanging stove with charcoal. When the temperature reaches 400°F/200°C, put it in the ribs and bake for about 30 minutes.

At this time, take the ribs out of the hanging stove and use scissors to trim the charred edges and corners on the surface.

Then, brush a layer of glazing liquid, put it back on the hanging stove, and continue to bake with residual temperature for about 10 minutes.
