Vegetable buns are not only incredibly easy to make but also a filling meal or snack. They are vegetarian-friendly and delicious with sweet vegetables wrapped in soft buns.

Ingredients:
  • For The Baby Box Choy
  • 0.25 tsp. Baking Soda
  • 0.25 tsp. Salt
  • 9 oz. Baby Bok Choyㅤ ㅤ ㅤ ㅤ ㅤ
  • ㅤFor The Mushrooms
  • 5 Fresh Shiitake Mushrooms
  • 4 tbsp. Cooking Oil (1tbsp for mushrooms 3tbsp for ginger)
  • 1 tbsp. Oyster Sauce
  • 6 slices Ginger, Sliced
  • 3 Large Eggㅤ ㅤ ㅤ ㅤ ㅤ ㅤ
  • For The Filling
  • 2 tbsp. Sesame Oil
  • 0.5 tbsp. Sugar
  • 2 tbsp. Rapeseed Oil
  • 0.5 tsp. Saltㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ ㅤ
  • For The Dough
  • 2 cup Flour
  • 0.5 tsp. Sugar
  • 2 tsp. Dried Yeast
  • 0.3 cup Water

Add baking soda, salt and bok choy in boiling water. After 1-2 mins, Take out bok choy and wash it in ice water breifly.

Chop it and squeeze out the water by wrapping it in gauze.

Chop mushrooms and then add cooking oil to stir fry them over medium heat for 2-3 mins. When you can smell the cooked mushrooms, you can take it out and set it aside in a bowl for later use.

Add cooking oil in a pan over medium heat. Fry the ginger for 1-2 mins and then set aside.

Stir fry the prepared eggs and then add mushrooms from Step 3 together for 1-2 mins

Add sesame oil, sugar, rapeseed oil and salt in the chopped bok choy prepared in Step 1 & 2. Mix them together well.

Add fried egg and mix them together well.

Whisk 1/2 tsp sugar, 2tsp yeast, 1/3cup of water and flour together to prepare the dough.

Then cover the dough with plastic wrap and let the it sit for 20-30mins at 30°C or for 3-4 hours at 15°C

Sprinkle a little flour lightly onto the working surface to prevent sticking. Knead the flour for 3-5 mins until the dough is fine and smooth. Shape the dough into strips and portion the dough into equal balls

Take a dough ball and roll it out from edge to center. Rotate and repeat until it forms a circle.

Add the prepared filling 4 to the center of the dough, and then pleat and twist the bun repeatedly until the top is closed.

Steam the buns for 12-15 mins. Then, turn off the fire and let it sit in the steamer for 1-2 mins.

Do not overly boil bok choy. After taking the bok choy out from the boiling water, do not forget to wash it in the ice water. Othewise, the leaves easily turn yellow. Do not smash the bok choy, chopping it is good enough, otherwise, it will taste plain. The time for proofing the dough is very flexible. You can adjust the proofing time based on the temperature and humidity. Check up on the dough while proofing until it rises, Do not get upset if it does not work. Practice makes perfect!
