This plant-based shepherd’s pie will not disappoint you. The robust cremini mushrooms stand out with their earthy meaty texture, the fusion of red wine, garlic and fresh herbs gives a superb aroma and adds richness to the pie. A great idea to add mashed cauliflower to put a lid on it. Yum! and packed with nutrients.

Ingredients:
  • Mashed Cauliflower
  • qt. Boiling water
  • lb. Cauliflower
  • 12 tbsp. Olive oil
  • 2 tsp. Vegan butter
  • 1 cup Nondairy milk
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • Pie mix
  • 2 tbsp. Olive oil
  • 1 medium Onion, diced
  • 3 stalks Celery, sliced
  • 5 medium Carrots, diced
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 2 cup Cremini mushrooms, sliced
  • 3 cloves Garlic, minced
  • 1 tsp. Dried thyme leaves
  • ㅤAssemble the Pie
  • 2 tbsp. Flour
  • 2 tbsp. Tomato paste
  • 2 tbsp. Soy sauce
  • 1 cup Dry red wine
  • 14 oz. Frozen pearl onion
  • 1 tbsp. Nutritional yeast
  • 1 tbsp. Parsley, chopped
  • 2 Bay leaf
  • 16 oz. Green peas
  • 1 cup Vegetable broth
  • Salt to taste
  • Pepper to taste
  • 1/3 cup Fresh parsley, minced, for topping

In a large pot 2/3 filled with water, add the cauliflower florets cook until fork tender approx 15 mins. Drain and add olive oil, butter, milk, salt and pepper. Mash well until it's smooth and creamy.

Preheat the oven to 350 °F/175°C.

In a medium skillet add some oil then onions, celery, carrots, and cook until onions become a bit translucent. Add the mushrooms and cook just until they begin to brown and the carrots have become tender for about 5 to 8 minutes. Season with salt and pepper to taste. Add the garlic and thyme, stir and cook for 1 minute.

Add the flour, stir to combine. Add tomato paste and soy sauce. Cook for 1 minute, then add wine and allow it to deglaze the pan. Add the pearl onions continue cooking until the wine has almost evaporated. Add the nutritional yeast bay leaf the green peas and half the broth. Simmer gently for 3-5 minutes. Season with salt and pepper.

Tip the pie mix into a deep oven-proof dish and spread the cauliflower mash evenly on top make some fork marks on top then drizzle a little olive oil, sprinkle half of the parsley on top.

Bake for 20 to 25 minutes. Switch the oven to the broiler setting. Broil for one minute. Take out of the oven and serve. Garnish with the rest of the fresh parsley.
