Cajun stuffed chicken breasts are a delicious dinner with a mix of fantastic flavours. Stuffed with bell pepper, onion and mozzarella make this dish tasty enough by itself without any side dish.

Ingredients:
  • 1.2 lb. Chicken breast
  • 1 1/2 tbsp. Olive oil
  • 1 1/2 tbsp. Cajun spices
  • 2 Cloves Garlic
  • 1/8 tsp. Ground salt
  • 1/8 tsp. Ground black pepper
  • Half Red bell pepper
  • Half Yellow bell pepper
  • Half Onion
  • 3 Slices Mozzarella cheese

Put the chicken into a bowl, drizzle oil over the chicken, add cajun seasoning, garlic, salt, and pepper, mix well then marinate for 20 mins.

Slice the bell pepper and onion then set aside.

Place chicken on a cutting board and make 4 slits in each breast then stuff each chicken breast with yellow and red peppers, mozzarella cheese, and onion, then transfer to the baking sheet, bake it on 400ºF / 205ºC until chicken is cooked through, about 25-30 mins.

Garnish with chopped parsley, serve.
