This recipe will show you how to make an authentic Spanish Paella Valenciana, a dish dated to the 19th century. You, too, can make this classic dish using recipes that can be found conveniently in your own local area.

Ingredients:
  • 5 tbsp. Olive Oil
  • 10 oz. Chicken Breast
  • 10 oz. Rabbit Meat
  • 1/4 tsp. Ground Black Pepper
  • 1/4 tsp. Salt
  • 2 cloves Garlic
  • 1 tbsp. Paprika Powder
  • 1/2 large Red Bell Pepper
  • 5 oz. Sweet Snow Peas
  • 12 oz. Navy Bean
  • 8 oz. Tomato Sauce
  • 2 sprigs Rosemary
  • 1 Qt Water
  • 1 tsp. Saffron
  • 2 tsp. Natural Yellow Food Coloring
  • 10 oz. Arborio Rice Bomba (Or Arborio) Rice
  • 1/4 tsp. Salt
  • 1 medium Lemon
  • 2 sprigs Rosemary

Dice chicken, rabbit, and large green beans so that everything is approximately 1 inch large. Cut the red bell peppers into large strips.

In a 12 to 15 inch large pan heat up the oil for 2 minutes over high heat.

Add the chicken and rabbit (be careful, the hot oil can splash) and cook until it is a nice golden brown for 4 to 6 minutes.

Add the red bell pepper strips. Cook for 2 minutes and remove from the pan.

Keep them on the side as they will be used as garnish.

Add the sweet snow peas and a pinch of salt then cook for 2 to 3 minutes.

Add pre-cooked white navy beans.

Stir everything for 2 more minutes on medium to high heat.

Cover with tomato sauce, rosemary, and water 1 inch approximately over the ingredients in the pot and add saffron.

Let it cook for 25 minutes on medium to low heat.

Remove rosemary add saffron, natural yellow food coloring, and rice.

Cook for 20 to 30 minutes over low heat. Stir only for the first 2 minutes, then let it cook without stirring.

Serve when the water has dried out and rice is cooked and soft.
