Extra crispy coating on the outside, tender juicy and colorful in the inside. Chicken breast rolled over swiss cheese salami and spinach. It is a delicious family treat or entertainer anyone can prepare it ahead of time; I served it with a creamy caper and Parmigiano cheese sauce.

Ingredients:
  • For The Chicken
  • 2 Large Chicken Breasts (4oz)
  • 1 tsp. Black pepper
  • 1 cup Spinach
  • 6 oz. Swiss Cheese
  • 6 oz. Genoa Salami Sliced
  • Fry Coating
  • 4 oz. Nacho Chips
  • 3 oz. Bread Crumbs
  • 2 oz. Parmesan Cheese
  • 1/2 tsp. Salt
  • 1/2 tsp. Oregano
  • 1 tbsp. Nutmeg
  • 5 oz. AP Flour
  • 3 Large Egg Mixture
  • 3 cup Milk
  • Gravy
  • 1 tsp. Olive Oil
  • 1/4 cup Onion, diced
  • 1 tbsp. Capers
  • 1/2 cup White Wine
  • 1/8 tsp. Salt
  • 1/8 tsp. Black Pepper
  • 1 cup Heavy Cream
  • 1/2 cup Parmigano Cheese
  • 1/2 cup Cheese
  • Coleslaw
  • 4 oz. Chorizo
  • 3 tsp. Sugar
  • 1 tsp. Salt
  • 3 oz. Champagne Vinegar
  • Assemble
  • 3 oz. Red Wine Vinegar
  • 1 cup Cherry Tomatoes, Split
  • 3 cup Milk
  • 1 tbsp. Pine Nuts

【For The Chicken】Take the chicken breast and slice it open from the thickest part to one side and then repeat to the next to extend the chicken, keep the meat intact.

Put the chicken between parchment paper with the flat side of the tenderiser pound the chicken gently so as not to tear the meat pound until you get and even piece approx 1/4 inch thick .

Lay out the pounded chicken sprinkle with black pepper then top with shredded spinach, cheese slices and the salami slices.

Roll up the chicken and secure with parchment paper followed by some foil twist the sides to secure it.

Put the wrapped chicken roll in the oven and cook for 15-20 minutes at 180°C / 350°F.

After chicken is cooked, unwrap the chicken and collect the juices from chicken and put them on the side.

【Coating】Blend nacho chips.

In a bowl add the bread crumbs crushed nachos, parmigano, salt, oregano, and nutmeg.

Fill the first tray with the seasoned flour the middle tray with the egg and milk wash the third with the bread crumb mix.

Roll the chicken first with flour then the eggwash finish with crumbs.

【Fry The Chicken】Heat the oil in a deep pan for frying the chicken at 180°C / 350°F to 190°C / 375°F.

Check the oil temperature then place the crumbed chicken and gently fry it roll it over after 2-3 minutes until it is evenly golden brown.

Place on kitchen paper towel.

【Gravy】In a medium heat pan add the olive oil diced onions cook until onions are translucent then add the capers, white wine and cook off for 1-2 minutes.

Add the saved chicken juice, salt, pepper and heavy cream. Reduce for 1-2 minutes.

Add the parmigano, cheese, and turn off the heat add more cream at the end before you serve if you like. check for seasoning .

【Coleslaw】In a bowl put all the 【Coleslaw】ingredients, set aside. soak for 10 - 15 min. (Please be mindful: The steps of pickled coleslaw should be placed after putting the chicken rolls in the oven.)

Slice the chicken roll with straight cuts

【Assemble】Lay out your coleslaw salad sliced chicken and creamy caper and cheese sauce. serve.
