Ingredients:
  • 7 oz. Chicken leg quarters
  • 3 cup Cooking oil for deep-fry
  • Marinade
  • 0.5 tsp. Salt (to taste)
  • 0.5 tsp. Black pepper (to taste)
  • 2 oz. Celery, diced
  • 2 oz. Carrot, diced
  • 2 oz. Onion, diced
  • 1 tbsp. Red wine
  • 1 tbsp. Maggi seasoning
  • 1 tsp. Five spice powder
  • 1 tbsp. Oyster sauce
  • 1 tbsp. Chili powder
  • 1 large Egg
  • 0.25 cup Cornstarch
  • 0.25 cup All-purpose flour

With the skin-side down, make a few cuts on the chicken leg quarters to the bone. This will help the marinade to penetrate and cook evenly when frying.

In a large bowl, mix and chicken with all the marinade ingredients. Set aside for 2~4 hours.

In a frying pan with heated oil, deep-fry the chicken at 300°F-350°F/150°C-180°C for about 10~12 minutes until golden brown, turning once. (You'll use two frying here: 4~5 minutes on each side; remove from the oil; re-fry for 1~2 minutes)
