Using leftover chicken in a hash with potatoes, onion and scallion makes a nice, hearty breakfast. It’s filling and delicious, perfect for breakfast or brunch!

Ingredients:
  • 11 Baby Potatoes
  • 2.5 cup Leftover Chicken
  • 3 clove Garlic, Minced
  • 1 cup Onion, Diced
  • 0.5 bunch Green Onions, Sliced
  • 1.25 tsp. Garlic Powder
  • 1.25 tsp. Onion Powder
  • 0.5 tsp. Crushed Red Pepper
  • 1 tbsp. White Wine
  • 2 cup Shredded Cheese
  • 1 cup Sour Cream
  • 1 tbsp. Scallion
  • 1 pinch Salt
  • 1 pinch Black Pepper

In a medium pot add diced potatoes, cover with cold water and boil for 5 minutes, until potatoes are tender which pricked with a fork.

Drain and set aside. In a medium skillet add olive oil and heat over medium heat. Add onion and stir. Add garlic and cook for about 2 minutes.

Add potatoes into pan, season with spices, mix well and cook for about 5 minutes more. Add turkey, mix well, and cook for 5 minutes. Transfer to an oven. Bake at 400ºF until it turns to golden brown (about 5-6 minutes).

In a small bowl with sour cream, garnish minced scallion as dressing.
