Tap on the sugar coating and crack to enjoy! Some of you may not be so familiar with Crème Brûlée. It is a French dessert that is basically cold custard cream with caramelized sugar on the top. Enjoy this fantastic light dessert for any occasion.

Ingredients:
  • 5 Large Egg yolk
  • 2.1 oz. Sugar
  • 1.6 cup Heavy cream
  • 1 tsp. Vanilla extract
  • 4 tbsp. Brown sugar
Directions:

In a large mixing bowl, whisk the egg yolk and sugar until well combined, about 3 minutes constantly and you’ll notice the yolks will lighten slightly.

In a cooking pot, add fresh cream and vanilla extract; bring it to a boil. When the edges start to boil, turn off the heat.

Add the warm cream to the egg mixture little by little. Whisk continuously at the same time.

Straining the custard filters out any eggy bits to ensure a nice, smooth consistency.

Fill 80% of ramekins with the custard mixture. Pour about 2 cups of hot water to fill the bottom of the baking pan and bake at 320°F/160°C for 50 minutes. (The water keeps the custard moist and soft.)

Put the cooled-down pudding into the refrigerator to lower its temperature.

Place a spoonful of brown sugar over the top of the pudding and melt with a torch. It will caramelize the top. You'll see little wisps of smoke puff up as the sugar begins to turn caramel-colored. You'll also smell the delicious aroma of cooked sugar, kind of like cotton candy.

When you're finished you'll have a hard, glass-like glaze of caramelized sugar on top. Enjoy!
