These Fluffy Custard Cream Buns are just a delectable and perfect choice for breakfast or as a dessert. The dough is fluffy and soft and prepared with repeated fermentation. The homemade custard cream just makes these buns such sweet and tasty. Try and enjoy for any occasion!

Ingredients:
  • Custard Cream Sauce:
  • 2 Large Egg Yolk
  • 1.6 Tbsp Caster sugar
  • 2 Tbsp Corn starch
  • 10.5 Tbsp Milk
  • 1/2 Tsp Vanilla extract
  • Bread Dough:
  • 1 Tsp Instant yeast
  • 0.56 Cup Whole milk
  • 1.27 Cup Bread flour
  • 1/4 Tsp Salt
  • 2 Tbsp Caster sugar
  • Dough start
  • 1.41 Tbsp Softened unsalted butter
  • Dough starter:
  • 1/4 Cup Water
  • 1/4 Tsp Yeast
  • 1/2 Cup All-purpose flour
  • 1/8 Tsp Salt
  • 3/4 Tbsp Water
  • 3 Tbsp All-purpose flour
Directions:

Mix the egg yolks with the sugar. Add corn starch and mix it well.

Add milk and vanilla extract. Pour the mix into a pot and cook on low heat until it forms a thick cream. Let it cool down.

Mix the instant yeast with milk.

Put the flour into a bowl and mix with salt, sugar, and the dough start. Mix it with the milk&yeast mix.

Knead the dough until it not sticking to the bowl. Cover and let it rest for about 15 minutes.

Add softened butter to the dough and knead it.

Roll out the dough to a square and wrap it into a foil. Put into the freezer for 30 minutes.

After rolling it out to a 27cmx27cm rectangle. Divide into 9 parts (9x9 cm size) and put it into a freezer for about 20 minutes.

Whisk the custard cream a little then fill it into a pastry bag.

Take out the dough from the freezer and work with each of them. Make 2 cuts as per the video, wash with milk and prepare the squares. When ready put them on a baking tray.

Then take the pastry bag and push enough cream on each of the squares. Put the dough in a warm place and ferment for about 90 minutes.

Milk wash and preheat the oven at 360 °F/180 °C. Bake for 15 minutes
