Easy focaccia that’s soft and chewy on the inside, while nice and crispy on the outside. This recipe includes two versions, a savory one that’s perfect as an appetizer and a sweet one that’s perfect for a dessert.

Ingredients:
  • Pizza Dough
  • cup Cold Water
  • 1/2 tbsp. Dry Yeast
  • 1.5 kg All-Purpose Flour (1500g)
  • tbsp. Granulated Sugar (17g)
  • 2 tbsp. Olive Oil (40g)
  • tbsp. Salt (20g)
  • 2 cup Flour (for kneading dough)
  • 12 tbsp. Olive Oil ( 4 tbsp for the dough box , 8tbsp for the dough )
  • ㅤFocaccia
  • 8 oz. Pistachio
  • 16 oz. Ham
  • 8 oz. Parmigiano Reggiano
  • 1 tbsp. Olive Oil
  • 1/8 tsp. Sea Salt
  • 1 tbsp. Parsley
  • ㅤNocciolata
  • 1 cup Nutella
  • 1/8 tsp. Sea Salt
  • 2 tbsp. Powdered Sugar

Put yeast in the water, and add oil. Wait 5 minutes mixing the water well.

Pour all the flour in the water and start mixing with your hands. Add sugar. Add salt.

Knead well for 15 to 20 minutes.

Put in a larger bowl and let rest for at least 4 hours at room temperature.

Push downwards and forward with the palm of one hand while folding the dough.

Divide the dough in 2 equal parts approximately.

In each oven pan put a dash of Extra Virgin Olive oil and spread all around the bottom and sides of the pan. Pan must be at least 2 inches high.

Stretch the dough in a rectangular shape to fit a full oven hotel pan size (approximately 12 by 20 inches).

Drizzle olive oil on top.

Let rest for at least 30 minutes.

On top of ONE of the focaccia spread all the pistachio and press the pistachio down with your fingers. Put in the oven for 15 to 20 minutes (until nice golden brown) at 180°C / 350°F. Once cooked, set aside at room temperature to cool down.

Take the focaccia with the pistachio, and cut into small squares of any size you like. (6 squares preferable)

Layer all the mortadella on top of the focaccia.

Place all shaved parmigiano on top of the mortadella.

Serve at room temp on a plate or platter.

After cooling down the cooked focaccia for 30 minutes, cut open the focaccia without pistachios to fill inside.

Spread desired Nutella or Nocciolata all around on one side of the opened focaccia.

Sifting some powdered sugar on top with a fine mesh strainer and serve
