Garlic Butter Chicken and Asparagus Recipe – Easy Chicken & Veggies

This garlic butter chicken and asparagus recipe are so flavorful and delicious. The chicken is very tender and juicy, smothered in the delicious garlic butter sauce. This chicken recipe will pair great with rice or mashed potatoes.

Ingredients:
  • 6 Large Boneless skinless chicken thighs
  • 1 tsp. Garlic powder
  • 1 tsp. Onion powder
  • 1 tsp. Italian seasoning
  • 1 tsp. Paprika
  • Salt and pepper to taste
  • 1 tbsp. Salted butter
  • 1 tbsp. Olive oil
  • 1 lb. asparagus
  • For the sauce:
  • 2 tbsp. Butter, salted
  • 4 Cloves Garlic, minced
  • 1/4 tsp. Red pepper flakes
  • 1 cup Chicken broth
  • Juice of 1/2 lemon
  • 3 tbsp. Freshly chopped parsley
  • 1/4 cup Parmesan cheese
Directions:

Start by seasoning the chicken tights with some spices. In a bowl add garlic powder onion powder Italian seasoning paprika salt and pepper go ahead and mix everything together. Then you're going to season both sides of your chicken thighs very generously with your spices and if you have time let the spices sit on the chicken to marinate for at least 2 hours.

Heat up the skillet over medium heat, drizzle in some olive oil and a little bit of butter. Once the butter has melted and the oil begins to get smoky go ahead and add in your chicken ties. We're going to cook the chicken thighs for six to eight minutes on one side. If you realize that chicken thighs are getting too brown make sure you turn down your heat a little bit.

Once you turn your chicken over it, you're going to cook the other side for another six to eight minutes. We want the chicken to get fully cooked so make sure you have a meat thermometer and check for an internal temperature of 165 °F/73 °C. When done take them out of the pan and set aside for later.

Next, in the same pan go ahead and toss in some more butter. Once the butter has melted go ahead and toss in some asparagus and guys if you don't like asparagus you can pretty much use whatever vegetables you like.

Let the asparagus saute for about three minutes then add some minced garlic and red pepper flakes go ahead and cook those for just one minute until the garlic begins to get fragrant. Then add some chicken broth in the juice of half a lemon. Next, add some Parmesan cheese and fresh parsley then mix everything together.

Let the sauce cook for two or three minutes to thicken up a little. If you realize the asparagus is getting too soft you can take those out and let the sauce cook on its own.

Add the asparagus back once the sauce has thickened up a little then add the chicken Just let the chicken heat through and that's it guys dinner is ready. You can serve this with brown rice and it is so good. Enjoy!
