Ingredients:

  • 4 oz. Unsalted room-temperature butter
  • 3/4 cup Dark brown sugar
  • 1 large Egg
  • 1 tsp. Vanilla extract
  • 1/2 cup Molasses
  • 1 tbsp. Grated ginger
  • [Dry Ingredients]
  • cup All-purpose flour
  • 2 tsp. Cinnamon powder
  • 3/4 tsp. Baking soda
  • 1/2 tsp. Salt
  • 1/4 tsp. Nutmeg powder
  • 2 tbsp. All-purpose flour
  • Royal Icing
  • 3⅓ cup Powdered sugar
  • 2 tbsp. Meringue powder
  • 3/8 cup Coldwater
  • Garnish
  • 1 tbsp. Sugar

【Gingerbread Cookies】Cream butter and sugar using the paddle attachment on a stand mixer.

Add egg, vanilla, molasses, and freshly grated ginger, and beat until smooth.

Whisk together dry ingredients, then mix into the dough just until incorporated.

Shape into a disk and chill a minimum of 20 minutes.

Sprinkle flour on a sheet of parchment, then put dough disk on top. Sprinkle more flour on top of the dough.

Then top with another piece of parchment. Roll to ¼” thick.

Chill 30 minutes.

Remove parchment from both sides of the dough.

Then cut into cookies, making sure to cut them as close to each other as you can. (Take dough scraps and reroll once to cut more cookies.)

Put on a parchment-lined baking sheet, leaving 1” in between cookies, and bake 8-12 minutes at 350°F/180°C, until the edges of cookies are just starting to turn golden brown.

Remove from the oven, cool to room temperature, and decorate.

【Royal Icing】Put all ingredients in the bowl of a stand mixer fitted with a whisk. Whip ingredients on medium speed for 2 minutes.

Put in a piping bag and use immediately. Allow icing to harden on cookies, then store up to a week in a covered container at room temperature.

For flooding consistency, the channel drawn through icing should take 2 seconds to fill. For lining consistency, the channel drawn through icing should take 5 seconds to fill

If using, add gel food coloring, one drop at a time, and mixing until completely incorporated, until the desired color is reached.
