Ingredients:
  • 1 1/2 Cups Oat flour (gluten-free)
  • 1 1/2 Cups Almond flour
  • 2 Tbsp Ground flaxseed
  • 1 Tsp Baking powder
  • 1/2 Cup Maple syrup
  • 1/3 Cup Oat milk
  • 1/4 Cup Melted coconut oil
  • 1 Tsp Vanilla extract
  • 1 Cup Chopped dark chocolate (vegan)
Directions:

Preheat the oven to 350 ºF/662 ºC. Line a baking sheet with parchment paper. Set it aside. In a large bowl, whisk together the oat flour, almond flour, flaxseed, and baking powder. Add the maple syrup, oat milk, coconut oil, and vanilla extract. Mix until the dough is smooth. Fold in the chocolate.

Scoop the dough onto the prepared baking sheet. Flatten the cookies by pressing the mounds of dough down using the back of a fork. Bake the cookies until they are lightly golden, about 12 to 15 minutes.

Allow the cookies to cool slightly before enjoying. Store in an airtight container for up to 5 days.
