This is the crispiest fresh calamari recipe the first thing that hits you is lemon and fresh herbs with the sweet nutty flavor of Kalamarakia. Ingredients:
  • 1 ea. Zucchini
  • ½ cup Mixed olives
  • 2 ea. Fresno chili sliced
  • 2 lb. Squid
  • Marinade
  • 1 cup Buttermilk
  • 1 ea. Lemon zest
  • ¼ tsp. Pepper
  • ¼ tsp. Salt
  • Onion
  • ¼ cup Extra virgin olive oil
  • 1 ea. Yellow onion
  • 1 tbsp. Garlic
  • 1 ea. Serrano pepper, diced
  • 1 tsp. Oregano
  • ½ cup White wine
  • 2 cans Canned tomato
  • ½ tsp. Salt
  • ½ tsp. Pepper
  • Crispy Coating
  • 1 cup AP flour
  • ¼ cup Corn starch
  • tsp. Ras el hanout
  • ½ tsp. Salt
  • ¼ tsp. Pepper
  • Deep-fry
  • 4 cup Oil
  • Assemble
  • 1 ea. Garlic
  • 1 tbsp. Extra virgin olive oil
  • ½ ea. Rosemary
  • ¼ ea. Red onion, sliced
  • ¼ bu. Parsley
  • 2 tbsp. Fresh dill
  • ½ ea. Lemon juice
  • tsp. Salt
  • tsp. Pepper

Process squid in 1-inch rings and marinate in the buttermilk, lemons zest, salt, and pepper.

In a medium pot, sweat the onions, garlic, and Serrano chili with olive oil, Add oregano and deglaze with white wine. Add the tomato sauce, salt, and pepper, and cook for 15 min.

Wisk in a medium bowl; flour, ras el hanout, cornstarch, salt, and pepper.

In a bowl strain and toss the calamari, seasoned flour, zucchini, halved olives, and Fresno slices.

Shake off excess flour and fry at 350°F/176°C till crispy.

Toss in a medium bowl, mix garlic, crispy calamari, olive oil, rosemary, red onion, parsley, dill, lemon juice, salt, and pepper.
