Korean BBQ is traditionally eaten in Ssam style. Ssam means “wrap”, a one-bite-sized wrap of fresh cold lettuce with a small piece of grilled meat and topped with sauce (ssamjang). We’ll show you how to make ssamjang, the fragrant and delicious dipping sauce, at home.

Ingredients:
  • 1 lb. Beef short ribs
  • 1 lb. Beef Top Round
  • 1.2 lb. Sirloin steak
  • 1/2 cup Kimchi
  • 2 Large King oyster mushroom
  • 1 Bunch Enoki mushroom
  • 2 Cloves Garlic
  • 15 Pieces Lettuce
  • 15 Pieces Perilla Leaves (Kaenip)
  • Various banchan
  • Marinade:
  • 1 1/2 tbsp. Rice vinegar
  • 1 1/2 tbsp. Gochujang sauce
  • 1 tsp. Sesame oil
  • 1/2 tsp. Minced ginger
  • 1/2 tsp. Minced garlic
  • Salt and pepper, to taste
  • 1/4 cup Soy sauce
  • Homemade Ssamjang:
  • 1/4 cup Doenjang (fermented soybean paste)
  • 1 tbsp. Gochujang (hot pepper paste)
  • 1 Stalk Minced green onion
  • 1/4 cup Chopped onion
  • 2 Cloves Minced garlic
  • 2 tsp. Honey
  • 2 tsp. Toasted sesame seeds
  • 2 tsp. Sesame oil

Prepare the meat and vegetables.

Mix all marinade ingredients in a medium bowl. Add the meat to the bowl and mix to coat.

Making Ssamjang: Use a spoon to mix all the ingredients in a large bowl.

Place the stove and grill plate in the center of the table. Turn on the stove and begin to grill your meat. On the edge of the grill plate, leave room to grill vegetables like garlic and mushrooms.

After the meat is grilled, begin making your wraps using Perilla Leaves and/or lettuce. Add your meat, other vegetables like roasted garlic, mushrooms, or kimchi, and Ssamjang on top of the wrap. Fold over the wrap with your hands and take a big bite.
