  • 3 Large Eggs, Beaten
  • 2.5 cup Leftover Chicken
  • 2 cup Leftover Stuffing (Green Beans With Bacon)
  • 5 Red and Yellow Bell Peppers, Hollowed Out
  • 1.5 cup Cheese, Shred
  • 1 pinch Salt
  • 1 pinch Black Pepper

Preheat the oven to 380°F (195°C).

In a large bowl, beat the eggs, then add chicken and stuffing. Season with salt and pepper. Mix well.

Cut the tops of the bell peppers off and remove the seeds. Stuff peppers with chicken mixture. Then add shredded cheese.

Transfer peppers to a baking dish and bake for 25 to 30 minutes until the peppers are tender and cheese is melted.
