This is one for the macaron beginner! These popular bite-sized macarons are so straight forward to make and they dont break the bank either. Try my delicate almond meringue cookie recipe with a rich dark chocolate ganache centre.Home made macarons are a wonderful way to show how much you care. Ingredients:
  • Macarons
  • 3 Large Egg White (90g)
  • 1/4 cup Granulated Sugar (65g)
  • 2/3 cup Almond Flour (85g)
  • 1 cup Powdered Sugar (150g)
  • ㅤDark Chocolate Ganache
  • 8 oz. Dark Chocolate
  • 4 oz. Heavy Cream
  • 1 pinch Salt

Preheat oven to 250°F/120°C.

【Make the Macaron】Put clean egg whites in the bowl of a stand mixer.

With the whisk attachment, mix egg whites on medium.

When egg whites are foamy and start to form peaks, slowly stream in granulated sugar.

Turn mixer up to high and whip meringue to stiff peaks. Do not over whip.

Stiff peaks.

Sift the powdered sugar with the almond flour together. If the almond flour is lumpy, pulse in a food processor with the powdered sugar.

Continue to fold until the mix looks like molten lava, or until batter falls off the spatula in a smooth stream, and you can make a figure 8 with it.

Pipe onto a sheet tray covered with parchment.

Lightly tap the tray to remove air bubbles.

Rest until a skin forms on top of the cookies, 10-20 minutes, depending on humidity.

Bake approximately 25-30 minutes until the cookies are set and dry inside.

【Dark Chocolate Ganache】Break up chocolate.

Chop chocolate until about chocolate chip sized.

Bring cream to a simmer.

Mix cream and chocolate.

Allow to sit one minute, then pulse, scraping down the sides, until smooth.

Pour into a piping bag, removing air bubbles.
