The smokey spicy rub on the steak just goes so well with the roasted flavors and sweetness from the potatoes. the addition of lemon juice and honey creates a lovely glaze on the sweet potatoes and the texture of the wholegrain hominy adds a pleasing crunch to the dish. The freshness from the sour cream sauce adds to the union when it enters the mouth, taste, smell, and touches fuse together to produce that unique flavor experience, Very satisfying.

Ingredients:
  • 1012 oz. Flank steak
  • Dry Rub for Steak
  • 1 tsp. Ground annatto seed
  • 1 tbsp. Coriander, toasted & ground
  • 1 tsp. Cumin Powder
  • 1 tsp. Ground black pepper
  • 1/2 tbsp. Salt
  • 1 tbp Olive oil
  • For the Sweet Potatoes
  • 1 tbsp. Olive oil
  • 1 ea. Sweet potatoes, cut Into spears
  • 5 cloves Garlic, minced
  • 1 cup Hominy, rinsed
  • 1/4 tsp. Salt
  • 1/8 tsp. Pepper
  • 2 ea. Lime zest
  • 1 ea. Lime juice
  • 4 oz. Honey or agave syrup
  • For the Steak
  • 1 tbsp. Olive oil
  • Sauce
  • 4 oz. Mexican crema
  • 1/2 tsp. Salt
  • 1 ea. Lime zest
  • 1 ea. Lime Juice
  • tbsp. Chipotle powder
  • Garnish
  • 1 tbsp. Cilantro, chopped
  • Pickled onions

Begin by toasting and grinding all of the【Dry Rub for Steak】 for the steak rub.

While steak is marinating, preheat an oven to 425°F/218°C

In a large saute pan, heat grapeseed oil until it just begins to smoke. Add sweet potato spears and saute until sides become a deep golden brown.

Add minced garlic and saute for 1min or until garlic begins to brown. Add the hominy, salt, pepper, lime zest, lime juice, and honey and transfer to the oven.

Roast vegetables until tender and a glaze begins to coat them. This should take about 12-15min.

Heat oil in a cast-iron skillet until it begins to smoke, searing both sides of the steaks.

Cut the stake into slices.

Mix all the ingredents of【Sauce】and drizzle around the plate to complete.
