I made a rare kiwi cheesecake. It’s refreshing and full of kiwi. Easy to make, no-bake, and no eggs. A perfect spring dessert.

Ingredients:
  • Kiwi puree
  • 0.35 oz. Gelatin
  • 1.76 oz. Water
  • 5.8 oz. Kiwi
  • 1.94 oz. Sugar
  • Cheese dough
  • 7 oz. Cream cheese
  • 3.5 oz. Plain yogurt
  • 3.5 oz. Heavy cream
  • Bottom
  • 2.1 oz. Biscuits
  • 1 oz. Melted unsalted butter
  • Kiwi jelly
  • 0.25 oz. Gelatin
  • 1 oz. Water
  • 5.9 oz. Water
  • 1.41 oz. Sugar
  • 3.5 oz. Kiwi diced
Directions:

Bottom: Put the biscuits in a thick bag, press with a rolling pin, and crush them into small pieces.

Add melted unsalted butter and knead well. When the butter is familiar enough, put it in a mold.

Firmly compact it with a cup and store it in the refrigerator.

Making kiwi puree: Peel 4 kiwis Weigh 165g for puree and 100g for jelly. Cut the jelly kiwi into 5mm squares and store in the refrigerator until the turn comes.

Crush the kiwi for puree with a mixer or hand blender.

Put crushed kiwi and granulated sugar in a small pan and heat over medium heat. Boil for about one and a half minutes after boiling and remove from heat.

When the puree has cooled to about 140 °F/60 °C, add softened gelatin and mix well.

Cheese dough: Put the cream cheese in a bowl and mix well until it becomes a smooth cream.

Add yogurt and kiwi puree in that order, and mix well each time.

Put the cream in a new bowl and whisk it in ice water. (7 minutes stand)

Add fresh cream to the cheese dough and mix well.

Pour into a mold, wrap and chill in the refrigerator for 2 hours to harden.

Kiwi jelly: Add water and granulated sugar to a small pan and heat. When it boils, add kiwi and heat. After boiling, simmer for about one and a half minutes and then remove from heat.

After cooling to about 60 °C, add soft gelatin and mix well.

Put the whole pot in ice water to lower the temperature of the jelly. .. If the temperature reaches a level that makes you feel "cold"

Pour the jelly over the chilled and hardened cheese dough. Refrigerate overnight to harden.

Apply a heated towel to the sides of the mold to melt the surface of the cake.

Move the mold and take out the cake to complete it! When cutting, it is good to use a warm kitchen knife. Enjoy!
