The pastitsio also knows as the greek lasagne which also has three layers. The pasta – tubular, the creamy cheese sauce and the rich meat sauce – bell pepper garlic and tomatoes and nutmeg. So many other components that make this dish highly flavorsome. It’s not complicated and you can make it up ahead of time.

Ingredients:
  • Ground Beef
  • 1 lb. Ground beef
  • 1 tbsp. Extra virgin olive oil
  • ea. Yellow onion
  • 4 cloves Garlic
  • 1 ea. Serrano
  • 2 ea. Red bell pepper
  • 1 tsp. Oregano
  • 2 ea. Cinnamon stick
  • 1 ea. Bay leaves
  • 1/4 tsp. Nutmeg, grated
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 1/3 cup Red wine
  • 2 cup Canned tomato
  • Sauce
  • 6 tbsp. Butter
  • 1 cup Flour
  • 1 qt. Milk
  • 1/4 ea. Yellow onion
  • 1 ea. Bay leaves
  • 1 ea. Thyme
  • 2 ea. Clove
  • 1/4 tsp. Salt
  • 1/2 tsp. Pepper
  • 1/2 tsp. Nutmeg, grated
  • 1 cup Parmesan cheese
  • 4 ea. Egg yolks
  • Pasta
  • 1 qt. Boiling water
  • 3 cup Macaroni
  • 1/2 tsp. Salt
  • Assemble
  • 1/4 cup Feta cheese
  • 2 tbsp. Grated parmesan cheese
  • 1 bu. Arugula
  • 1/4 cup Shredded parmesan cheese
  • 1 tsp. Extra virgin olive oil

Preheat the oven at 425°F/220°C.

In a large pan, heat the olive oil just till smoking and sear the ground beef. Break down as much as possible making sure browning meat. (remove excess oil)

Add chopped onion, chopped garlic, bell pepper, and serrano chili. Once the onion is translucent, add the nutmeg, oregano, bay leaves, and cinnamon stick and season with salt and pepper to taste. Cook for 3 minutes.

Deglaze the pan with red wine and add the canned tomato once the alcohol odor has evaporated.

In a medium pot, heat the butter and flour mixing often until the odor of raw flour is gone. Slowly whisk in the milk whisking away lumps from the thickening milk.

Add onion, cloves, bay leaves, and nutmeg, once fully thickened, strain the cheese sauce, and whisk in parmesan and egg yolks, season to taste.

Bring salted water to a boil. Stir in dry elbow macaroni noodles. Bring the water back to a boil and cook the noodles for 7 to 10 minutes. Drain the noodles.

Toss in a bowl with the macaroni and the cheese sauce.

Layer half of the macaroni on the bottom of the casserole dish and lay ground beef on the top of the macaroni, cover with remain macaroni and garnish with feta cheese and grated parmesan cheese. Bake for 30 min.

Top with arugula, shredded parmesan cheese, and extra virgin olive oil. Enjoy!
