Pizza Fritta Ripiena (Stuffed Fried Pizza)

- ㅤ Pizza Dough
- 1½ cup Cold Water
- 1 tsp. Dry Yeast
- 3 cup All-Purpose Flour
- 1 tbsp. Salt
- ㅤ ㅤFilling
- 20 oz. Ricotta Cheese
- 1/4 cup Walnuts
- 16 oz. Ham, cut into stripes
- 1/4 cup Parmigiano-Reggiano
- ㅤ ㅤFor Deep Fry
- 2 Qt Corn Oil
- ㅤ ㅤSalad
- 1/4 cup Parsley, chopped
- 1/4 cup Cilantro, chopped
- 1/4 cup Radicchio
- 3 slices Basil
- 1 tsp. Red Thai Chili Peppers,chopped
- 1/4 tsp. Salt
- 1/2 Lemon Juice
【Pizza Dough】Step 1
In a mixer add water with yeast.
Mix with flour and add salt.
Gradually add dry ingredients to water and start mixing.
Mix with your hands on a flat surface for 15 minutes.
Let rest for 20 minutes at room temp in a bowl covered with plastic wrap.
After 20 minutes divide cutting the dough in 6 parts making balls.
Let rest the balls distant from each other in a 2 inches high (at least) tray for 6 to 8 hours.
Stretch the pizza dough balls in a round shape. Stretch 2 at a time.
In the middle of the dough put ricotta cheese, walnuts, ham, and Parmigiano-Reggiano.
Place the second stretched pizza dough on top.
With a fork close the edges of the dough pressing down.
Make the same with the rest of the dough. You should have 3 pizzas with filling inside (6 stretched pizza, each filled up pizza has 2 stretched doughs, one at the top and one at the bottom = 3 filled up pizzas).
【For Deep Fry】Step 1
Fry in oil at 180°C / 350°F.
Lay the fried pizzas onto a tray with paper napkins to dry excess frying oil.
Mix al the [salad] ingredients in a bowl.
Place fried pizzas on top.
