Spicy Thai Basil Butter Leaf Sear Scallops is a beautiful dish that you can make for a party or a dinner gathering. The flavor of the scallops along with the seasoning of the lime balances out with the refreshing taste of fresh basil.

  • 1 lb. Scallops
  • 1/2 tsp. Ground Salt
  • 1/4 tsp. Ground Black Pepper
  • 34 tbsp. Olive Oil
  • 1/4 cup Coconuts Amino
  • ㅤSauce
  • 1 tbsp. Coconuts Amino
  • 1 tbsp. Sweet Chili Sauce
  • 1 tbsp. Oyster Sauce
  • 1 tbsp. Fish Sauce
  • ㅤFor The Vegetables Filling
  • 1 tbsp. Olive Oil
  • 4 medium Mini Sweet Bell Peppers
  • 1/2 Large Green Bell Pepper, diced
  • 1 Large Zucchini, diced
  • 1/4 tsp. Ground Salt
  • 1 cup Mushroom, diced
  • 2 small Shallot, sliced
  • 1/4 cup Thai Basil
  • 1 tbsp. Mint, chopped
  • 1/4 cup Cilantro, chopped
  • 1/4 cup Green Onion, sliced
  • 1/4 cup Mung Bean Sprout
  • 1 medium Lime Juice
  • 1 large Ginger, sliced
  • 1/4 cup Chopped Peanuts
  • ㅤFor The Rice
  • 2 cup Cooked Rice
  • 1/4 cup Coconut milk
  • ㅤ ㅤ ㅤ ㅤGarnish
  • 3 tbsp. Green Onion, sliced
  • 1/4 small Lime Juice

Dry with a paper towel. Season with a sprinkle of salt and pepper.

Add olive oil 3-4 tbsp just enough that it will spread around the skillet evenly.

Place the scallops into the skillet making sure to lay them towards the back of the stove so as to not splatter hot oil on your hands. (Learned that one through trial and error more than once!)

Add coconuts amino.

Pull out the scallops and let them rest before cutting them into thin slices or dicing them.

Mix all the【Sauce】ingredients.

Using a wok or skillet/saute pan - Add vegetable oil evenly on the pan. Once the skillet has reached the saute point add in all the vegetables with the sauce.

Finally, add ginger and chopped Peanuts

Mix-well cooked rice with the coconut cream, folding and stirring until the rice is completely covered.

Spoon in the vegetables filling the cup and then place the sliced scallops on top.

Drizzle the sauce and garnish with green onion and lime.

Add a scoop of Coconut Rice to the plate and a couple of lime wedges. Enjoy!
