  • 12 oz. All-Purpose Flour
  • oz. Extra Virgin Olive Oil
  • 1/2 tsp. Baking Soda
  • tsp. Salt
  • tsp. Ground Black Pepper
  • oz. White Wine
  • ㅤChef’s Special Mediterranean Panure
  • 6 slices Bread Special Mediterranean Panure
  • 1 tsp. Chopped Parlsey
  • 2 sprigs Mint, diced
  • 1 tsp. Oregano
  • 1/2 oz. Dried Shrimp
  • 2 oz. White Wine
  • 2 oz. Extra Virgin Olive Oil
  • ㅤFor The Mussel
  • 2 tbsp. Olive Oil
  • 2 Cloves Garlic
  • lb. Mussel
  • 1/4 tsp. Salt
  • 10 oz. Cherry Tomatoes, split
  • 2 oz. White Wine
  • ㅤGarnish
  • 1 tbsp. Parsley
  • 1 large Lemon
  • tsp. Olive Oil

Mix all ingredients for the taralli in a bowl for just about a minute without obtaining a smooth dough yet.

Knit the dough on a flat clean surface for about 5 minutes or until smooth.

Let rest for 40 minutes at least.

Cut small pieces of around ½ OZ and with the palm of your hands roll each piece into sticks.

Lay on an oven sheet tray with parchment paper.

Press with two fingers on one extremity of each stick making the extremity flat and giving a spoon like shape to the stick.

Sprinkle or brush some more olive oil on top.

Cook in the oven at 170°C / 340°F for 25 to 30 minutes. You want the taralli to be a nice brown color.

Blend all ingredients together in a food processor.

Lay on an oven sheet tray with parchment paper. Bake in the oven at 180°C / 350°F for 5 to 7 minutes or until golden brown.

In a pot on high heat put oil, and garlic. Let heat up for 2 minutes.

Add in the following order, mussels, salt, pepper, and tomatoes. Let cook for 5 minutes on medium heat.
