A popular way in Cyprus to eat watermelon when in season is with the luscious salty halloumi. Why has this become a tradition? because the textures work so well together the combination of salty and sweet squeaky and juicy really work. This dish is full of ripe summerlike flavors The mint arugula and basil in the gazpacho are so cool. Its vibrant contrast and its light flavors just add to a beautiful watermelon and halloumi salad. Note: Saganaki a small pan best known for pan-seared cheeses.

Ingredients:
  • Watermelon Salad
  • 1 small Watermelon
  • 1 ea. Cucumber, remove seeds
  • 1/4 ea. Red onion, sliced
  • 1/2 cup Cherry tomato, cut into half
  • 2 ea. Belgian endive
  • 1/2 ea. Radicchio, large slice
  • 2 tbsp. Mint
  • 2 tbsp. Parsley
  • 1/2 ea. Lemon juice
  • 1 tbsp. Extra virgin olive oil
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • Saganaki Halloumi
  • 1 tbsp. Extra virgin olive oil
  • 7 oz. Halloumi cheese
  • Cucumber gazpacho
  • 2 ea. Cucumber
  • 2 cup Arugula
  • 1/2 cup Basil
  • 1 cup Parsley
  • 1/4 cup Mint
  • 1 ea. Lemon juice
  • 1/4 cup Extra virgin olive oil
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 1 ea. Garlic
  • 1/2 ea. Serrano chili
  • 1/2 cup Water
  • Garnish
  • 1 tsp. Dill
Directions:

In a blender, add cucumber, arugula, basil, parsley, mint, lemon juice, olive oil, grated garlic, dill, water, salt, and pepper, blend until liquified.

In a large bowl, whisk together watermelon, cucumber, red onion, cherry tomato, Belgian endive, radicchio, mint, and parsley. Toss together in the same bowl with lemon juice, olive oil, salt, and pepper.

In a grill skillet or pan, lightly brush with oil and grill the halloumi cheese after slicing 1inch thick slices.

In a serving bowl pour the gazpacho then in a tight mound lay the watermelon salad in the middle of the gazpacho.
