These Bacon Veggie Roll Ups are totally addictive. You can easily substitute the Enoki mushrooms with other vegetables to create a fun and quick meal!

Ingredients:
  • oz. bacon
  • oz. asparagus
  • oz. carrot
  • 2 oz. Enoki mushrooms
  • 1 cup corn starch
  • 4 cup oil
  • 1 tsp white wine
  • oz. shredded cheese
  • 12 toothpicks to secure bacon

Cut asparagus, carrot, Enoki mushrooms to the length of 2~3 inches.

Cut bacon slices in half.

Add white wine on top of the asparagus, carrot, and Enoki mushrooms. Wrap the bacon around asparagus, carrot, and Enoki mushrooms into a roll.

Use toothpicks to stabilize the bacon rolls, then coat each roll with Cornstarch.

Fry the bacon rolls in medium-high heat oil. Cook 2~3 minutes and drain the oil.
