Well then! There is a lot of Fresh Fresh Fresh going on here. Limes and chili go so well and so make the herbaceous notes of dill pair up with the fresh horseradish. It doesn’t stop there as we have the fresh earthy tones in a salad of beetroot and Arugula. Let’s face it salmon is so versatile and this dish provides plenty of flavor and texture and is easy on the eye too—a winner for your next special dinner.

Ingredients:
  • 1 lb. Salmon
  • 0.5 medium Lime
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • Breadcrumb Mixture
  • 0.25 cup Parsley
  • 2 tbsp. Horseradish
  • 0.25 cup Dill
  • 0.5 cup Breadcrumbs
  • 1 tsp. Sesame Oil
  • For the Beet Salad
  • 2 oz. Arugula
  • 1 oz. Walnut
  • 0.25 tsp. Cumin Grains
  • 1 oz. Balsamic Vinegar
  • 1 tbsp. Olive Oil

In a pot, boil and simmer beets and cumin grains in water for about 40 minutes.

Finely mince parsley and dill, grate about 2 tbsp of horseradish, then combine with breadcrumbs in a small mixing bowl. Add sesame oil and salt and black pepper to taste, making sure to combine the mixture well.

Wash the salmon and cut it into 4 equal pieces.

Season each piece of salmon with fresh lime juice from the lime half, then generously apply and coat the chili sauce onto the salmon. Cover the salmon thoroughly with the previously made breadcrumb mixture.

Bake the salmon on a parchment paper lined baking sheet at 400 °F / 205°C, for about 15 minutes. The baking tray should be placed on an oven rack in the middle of the oven.

Soak the beets in cold water after boiling.

After the beets have been cooled, peel and cut the beets into thin slices.

Transfer the beets and arugula to a large mixing bowl, add balsamic vinegar, walnuts, olive oil, salt and black pepper to taste, and mix well.
