Ingredients:
  • Fluffy Vanilla Sponge cake
  • 3 Large Eggs
  • 2.6 oz. Sugar
  • A pinch of salt
  • 0.5 tsp. Vanilla extract
  • 0.7 oz. Honey
  • 2 tbsp. Milk
  • 3.3 oz. Cake flour
  • 2 tbsp. Unsalted butter
  • Cheesecake full of freshness
  • 9.5 oz. Cream cheese
  • 5.6 oz. Unsweetened yogurt
  • 7 tbsp. Sugar
  • 1 tsp. Vanilla extract
  • 2 tsp. Lemon juice
  • 1 tbsp. Powdered gelatin
  • 1.2 oz. Water
  • 5.2 oz. Heavy cream (50% whipped) (1/2 cup + 2 Tbsp-before whipping)
  • Transparent lemon jelly
  • 1/2 cup Powdered gelatin
  • 13.2 oz. Water
  • 26.4 oz. Hot water
  • 8.8 oz. Sugar
  • 1.7 oz. Lemon juice
  • Fruits for decoration: Strawberry, kumquat (not orange), dragon fruit, mango, Shine Muscat, red cherry, kiwi (for insert)

Mix egg, sugar, a pinch of salt, honey, and vanilla extract. Mix well so that the sugar does not clump. Place the bowl over hot water. The temperature of the egg mixture should be 100.4~107.6 °F / 38~42 °C.

Prepare milk and butter warm. In the meantime whip the egg mixture with a hand mixer. Make enough bubbles at high speed. Whisk for 2-3 minutes at low speed.

Add the milk and mix. Divide the flour twice and add. Mix well.

Finally, mix a little dough with the melted butter, then add this mixture to the rest of the dough and mix.

Pour it into a mold and after preheating the oven to 338 °F/170 °C, bake at 320 °F/160 °C for 30~33 minutes. Let cool at room temperature. Cut the edges of the dough.

Cheesecake: Mix the cream cheese gently with a spatula. Add yogurt and mix.

Add sugar and mix. Add vanilla extract and lemon juice and mix.

Add the gelatin and mix. Add heavy cream and whipped cream.

Prepare the mold and dough. Add a layer of dough and a layer of the cream and sliced fruit on the top of the cream on each layer. Repeat the same finishing with the cream on the top. Refrige for 2~3 hours.

Take it out from the fridge, remove the mold and paste your favorite fruit. Fruit needs to be cut into half as per the video. Paste the fruit neatly. Cover the lid to prevent drying. Refrige for 30 minutes.

Shiny transparent jelly: Mix the powdered gelatin with water. Let the gelatin stand for 15~20 minutes. Add hot water at a temperature of 140~149 °F/60~65°C. Mix thoroughly.

Add sugar and lemon juice and mix.

Take out the cake, put it into a mold, and wrap it. Pour the gelatin over the fruit and the sides as well. The thin coating prevents the fruit from drying out. Refrige for 2~3 hours.
