This dish is probably one of the easiest yet most flavorful foods you will ever make. Cassoulet combines beans and three kinds of meat with a hint of tomato sauce, making it the perfect lazy dinner for your entire family. And it’s all done in one giant pot!

Ingredients:
  • 1 lb. Cannellini Beans
  • 4 cup Chicken Stock
  • 3 Whole Clove
  • 1 half Onion
  • 7 springs Thyme
  • 3 Bay Leaves
  • 5 cloves Garlic
  • 2 medium Carrots
  • tsp. Salt
  • 1 tsp. Ground Black Pepper
  • 1 tsp. Olive Oil
  • 20.8 oz. Duck Legs
  • 10.4 oz. Beef Hind Shank
  • 6.4 oz. Italian Hot Sausages
  • tbsp. Olive Oil
  • 1 tbsp. Tomato Paste
  • 1/3 cup Red Wine
  • 1 cup Canned Crushed Tomatoes
  • 1 oz. Parsley
  • 2 oz. Breadcrumbs

Soak the cannellini beans in water in a big bowl overnight.

Drain the beans and cook in a saucepan with chicken stock, stud half an onion with 3 whole cloves, add thyme, bay leaves, carrots, and 5 cloves of garlic and season with salt and black pepper. Cover the lid and simmer for 1 hour.

Sear all the meats in another pan until golden brown on both sides, and set aside.

In a semi-deep cast-iron pot, add oil, tomato paste, and red wine. Flambé it.

Layer a can of crushed tomatoes, half of the cooked beans, the seared meat, the rest of the beans, and pour the beans juice over it.

Bake uncovered in the oven at 350°F/180°C for 2 hours.

Mix chopped parsley with breadcrumbs and cover the entire pot of beans.

Put it back in the oven uncovered for another 10 minutes.
