These one pan roasted chicken and potatoes are tossed in the Asian-inspired savory honey sauce and roasted in the oven until juicy tender. It’s an amazingly delicious midweek meal to add to your rotation. It’s so delicious, quick and easy!

Ingredients:
  • 1 Whole Chicken
  • For the Chicken Marinade:
  • 2 tbsp. Parsley, chopped
  • 2 tbsp. Onion, chopped
  • 3 clove Garlic, minced
  • 2 tbsp. Honey
  • 3 tbsp. Soy Sauce
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • For the potatoes:
  • 3 Potatoes
  • 2 tbsp. Olive Oil
  • Salt & pepper, to taste
  • For the sauce:
  • 2 tbsp. Butter
  • 2 tbsp. Parsley, chopped
  • 2 tbsp. Basil, chopped
  • 1 tbsp. Garlic, minced
  • 1 tbsp. Soy Sauce
  • 2 tbsp. Mustard
  • 1 cup Water
  • 1 tsp. Cornstarch slurry

Preheat the oven to 400°F/200°C.

In a large bowl, add chicken pieces, parsley, onion, garlic, honey, and soy sauce. Season with salt and pepper. Toss to mix well. Marinate for 2 hours.

Chop the potatoes. Transfer to a baking pan. Add olive oil, salt and pepper, and mix well.

In a large skillet over medium-high heat, add olive oil and marinated chicken thighs. Cook until golden brown on both sides. Transfer the chicken to the baking pan with potatoes at the bottom.

In the same skillet, add butter, parsley, basil, garlic, soy sauce, mustard and water. Mix well and bring to a boil. Add cornstarch slurry to thicken the sauce. Pour the sauce over the chicken in the baking pan.

Bake at 400°F/200°C for 50 minutes.
