Ingredients:
  • 2.25 lb Large Rack of Back Ribs
  • 4 clove Garlic
  • 0.3 cup Scallion
  • 0.3 cup Ginger
  • 1 tbsp Sugar
  • 1 tsp Sichuan Peppercorn
  • 0.1 cup Cooking Wine
  • 0.25 cup Soy Sauce
  • 1 pinch Malt Sugar
  • 0.5 count Lemon
  • 1 pinch Black Pepper to Taste

Put a large rib on the cutting board, peel off the skin of the rib.

Crush the garlic, chop the scallions, ginger, toss onto the rib, season with some sugar, Sichuan peppercorn, cooking wine, soy sauce, marinate for 12 hours. Then bake at 527 ºF / 275 ºC for about 2 hours.

Remove the ginger , scallion and garlic on the rib.

Take some malt sugar, melt with hot water, mix well, add some lemon juice, brush onto the surface of the rib, broil at 375 ºF / 190 ºC for another 8 minutes.

Brush the malt sugar again then back to the oven then broil for another 8 minutes at the same degree.
