Tender, green asparagus is served over a bed of creamy white asparagus sauce, topped with crispy fried soft-boiled eggs. It’s a simple and elegant recipe full of fresh flavors and diverse textures.

Ingredients:
  • 8 stalks White Asparagus
  • 1 tsp. Salt [Asparagus Boilling]
  • 8 stalks Asparagus
  • 1 cup Asparagus Water
  • 1 tbsp. Salt [Egg Boilling]
  • 1 tbsp. White Vinegar
  • 4 Large Eggs
  • 2 tbsp. Butter
  • 0.25 cup Flour
  • 1 cup Heavy Cream
  • White Asparagus Sauce
  • 1 tsp. Salt
  • 0.5 tsp. Black Pepper
  • 0.25 tsp. Nutmeg
  • 2 tsp. Dark Soy Sauce
  • 1 tbsp. Cooking Oil
  • Green Asparagus Saute
  • 0.5 tsp. Salt
  • 0.25 tsp. Black Pepper
  • Garnish
  • 1 tsp. Pea Shoots
  • 4 pieces Edible Flowers
  • 1 tsp. Green Peas

Bring a pot of water to a boil, meanwhile peel the white asparagus and cut it in half. Season the water with 1 teaspoon of salt and add white asparagus, cook for 3 minutes.

Trim off the tough bottom of the green asparagus, then split each spear in half.

Drain the white asparagus, and chill it in a bowl of cold water, then remove and slice it into small pieces and set aside. Reserve 1 cups of asparagus cooking liquid for later use.

Fill a medium saucepan with water and bring to a boil, add 1 tablespoon of salt and white vinegar, cook the eggs over medium heat for 5 minutes.

In another pan, heat butter over medium heat until melted, add flour and cook for 2 minutes, stir in 1/2 cup of asparagus cooking liquid and simmer until thickened, then add the remaining cup of liquid, followed by heavy cream and diced white asparagus, season with salt, black pepper and nutmeg, stir well and set aside.

Transfer eggs into a bowl of cold water, peel off the shell and brush with dark soy sauce, set aside.

Heat a cast iron grill pan, drizzle it with 1 tablespoon of cooking oil and grill the green asparagus for 1 minute on each side, season with salt and black pepper, and remove to a plate.

Pour 3 inches of cooking oil into a saucepan, heat the pan over medium high heat, add in the eggs and deep-fry until it turns crispy and golden brown, remove eggs onto a paper towel lined plate.

To serve, spoon some white asparagus sauce in the center of a plate, top with green asparagus, cut fried eggs in half and arrange it over the green asparagus, garnish with microgreens, edible flowers and green peas, enjoy!
