Sweet and tangy Chicken wings; is what Gui Fei Chicken wing is all about. A perfect all-rounder chicken recipe that can be served as a tasty meal for the whole family. A dish that was named after one of the four beauties of China — who loves chicken and braised it together with wine, hence this recipe calls for a glass of red wine.

Ingredients:
  • 1 lb. Chicken Wings
  • 1 tsp. Shaoxing Wine
  • 1/2 tsp. Salt
  • 1/4 tsp. White Pepper
  • 3 Slices Ginger
  • 1 Stalk Green onion
  • 2 tbsp. Water
  • 1/2 cup Rock sugar
  • 1 tbsp. Cooking oil
  • 2 Slices Ginger, sliced
  • 1 Stalk Green onions, cut Into 1/2 Inch Pieces.
  • 2 cup Salted chicken stock
  • 1/2 tsp. Salt
  • 1/4 tsp. White pepper
  • 1/2 cup Red wine
  • 2 tbsp. Potato starch slurry (1 To 2 Ratio Of Cornstarch To Water)
Directions:

Place chicken, salt, Shaoxing wine, ground white pepper, ginger slice, and a stalk of green onions in a bowl. Mix well and let it marinate for 15 minutes.

Boil some water in a pot and add the chicken wings, ginger, and green onion stalk.

Simmer for 8 minutes and remove; strain and set aside.

In a medium skillet, place two tablespoons of water and rock sugar. Mix well until the sugar has dissolved and caramelized.

Remove from the pan and set aside.

In the same skillet over medium heat, add cooking oil and the simmered chicken.

Season the chicken with salt and ground white pepper to taste.

Pour in red wine and prepared sugar sauce; bring the mixture to a boil and reduce to a simmer for 25 minutes on low heat.

Pour and mix the potato slurry into the simmered chicken.

Serve immediately.
