Ingredients:
  • 7 oz. Cuttlefish (Cleaned)
  • 0.5 tsp. Salt
  • 1 tsp. Baking Soda
  • 0.5 cup Water
  • 2 oz. Celery
  • 1 oz. Carrot
  • 2 tbsp. Vegetable Oil
  • 1 tbsp. Garlic (Minced)
  • 1 tbsp. Shaoxing Wine
  • 0.5 tsp. White Pepper to Taste
  • 0.5 tsp. Salt
  • 0.5 tsp. Sugar
  • 2 tbsp. 1 Tsp Corn Starch Mixed With 2 Tbsp Water

Cut open the fleshy part of the cuttlefish. Divid into 3 piece. Thinly slice the cuttlefish.

Put the cuttlefish slices in a medium size bowl. Add the salt, baking soda and water in the bowl and mix well.

In another large bowl filled with water, add the cuttlefish mixture and rinse well. Drain and set the cuttlefish aside. This step will help to tenderize the cuttlefish.

Cut celery sticks and carrot at a diagonal into ¼ inch thick slices.

Heat a large wok over high heat. Add 4 cups of water and 1/4 tsp salt. Add cuttlefish slices, celery and carrot slices. Cook for 1 to 2 minutes until it is fragrant and bright green in color. Remove and set aside.

In a large wok, add 1 cup of vegetable oil. Swirl the oil around in the wok. Deep fry the cuttlefish slices, celery and carrot slices for 15 seconds. Drain the oil. Remove and set aside.

Use the same wok, add 1 tbsp vegetable oil to the wok. Stir fry minced garlic, and add salt, sugar, white pepper, cooking wine, cornstarch water mixture.

Add cuttlefish and stir fry for 30 seconds.
