Honey Castella Pudding Cake is a typical Japanese sweet with caramel, pudding, and castella cake on the top. It is light the castella is moist and fluffy, the pudding is sweet and along with the bitter-sweet caramel, it creates an amazing taste.

Ingredients:
  • 2.1 Oz. Sugar
  • 0.35 Oz. Water
  • 0.35 Oz. Brandy
  • 0.52 Oz. Honey
  • 2.1 Oz. Sugar
  • 3 Large Eggs
  • 1 Large Egg yolks
  • 13 Oz. Milk
  • For the Castella:
  • 1 Large Egg
  • 0.35 Oz. Honey
  • 0.8 Oz. Sugar
  • 1 Oz. Cake flour
Directions:

Mix sugar with water in a pan and prepare the caramel.

Pour the caramel into the containers. Keep refrigerator until next step.

Prepare the pudding. Mix brandy with honey, sugar, 3 eggs, and egg yolk. Mix them well.

Heat the milk to 140 F/60 C and add to the egg mix, whisk well.

Strain the mix to further smoothen it. Filter again with a tea strainer.

In a bowl mix an egg, honey, and sugar. Put the bowl into hot water and whisk until the temperature reaches 93 F/ 34 C.

When it is warm remove it from the water and whisk at high speed for 3 minutes.

When it turns into a firm foam, reduce whisking speed and keep whisking to adjust the texture. Add flour and mix.

Put the pudding solution into the containers.

Float the castellated dough over the pudding.

Place the pudding cups into hot water and steam them in the oven. For about 40 minutes and at 320 F/ 160 C. Cool it in the refrigerator overnight.
